Turbo mixer section

Batter & Cream preparations

The pre-mixing equipment can be manufactured in different sizes according to the productivity required. We provide two dedicated mixing systems, one for batter and one for cream.
The batter pre-mixer features blades rotating on the vertical axis with a flat bottom, while the cream pre-mixer blades rotate on the horizontal axis with a round bottom. Pre-mixers can be fully double-jacketed to ensure precise temperature control during preparation.

Turbo Mixer

The Turbo Mixer is designed to emulsify and aerate batter and cream using air, allowing the desired specific gravity required in industrial cake production.
It can be used both for cream and liquid mixtures. Emulsification is achieved through the engineering design of rotor and stator, while aeration occurs through air or gas injection directly in the turbo head. The equipment is available in several sizes depending on production capacity and industrial bakery requirements.

Cooling system’s benefits

Inside the Turbo Mixer head, the rotor spins within the stator, emulsifying and aerating the mixture while generating heat through friction. Uncontrolled heat may affect the consistency of aeration and emulsion.
TT Italy addresses this challenge of food processing technology by equipping all Turbo Emulsifiers with a double temperature control system that keeps the temperature stable and ensures homogeneous specific gravity.

Complete control

The Digital Control System allows full monitoring of production and process control parameters, ensuring a high level of product quality and fast return on investment.
This technology guarantees consistent results independent of environmental conditions or process complexity. It also allows manufacturers to easily develop new products and adapt production to evolving market demands.

Pressurized oil sprayer

Machine designed to accurately grease the product cavities in the baking trays, fully programmable via PLC control. The engineering of the system ensures effective product extraction during the depanning operation, reducing downtime and production waste.

Automatic denester

The Denester is designed to dispense paper cups of any type and size used in cupcake and muffin production. An air blowing and suction system separates the cups and places them in the desired position, either directly into tray cavities or onto the conveyor.

Volumetric piston depositor

TT Italy’s Volumetric Piston Depositor performs highly accurate batter dosing in baking trays, paper cups or directly on the conveyor belt.
Our plants for the bakery industry allow solutions for all productivity volumes and product formats. The machine guarantees constant control of batter temperature and volume, even for delicate aerated products.
Combining the Depositor with TT Italy’s Turbo Mixer ensures full control over production parameters and unmatched final product consistency.

Trays handling section

This section includes conveyors, transfers and curves specifically engineered to manage trays along the industrial bakery process line, ensuring synchronized speeds and precise spacing between trays throughout the production cycle.

Baking section

During the baking phase the cakes are perfectly baked while controlling internal product moisture. Tunnel ovens divided into multiple baking zones ensure full process technology control, guaranteeing consistent baking results for cupcakes, muffins and deposited cakes.

Cooling tower

TT Italy’s Cooling Tower performs the continuous cooling of cakes in trays. By moving trays vertically, the system significantly reduces the footprint of the industrial cake line, making it ideal when production space is limited.

Cooling tunnel

This advanced Cooling Tunnel equipment is designed for efficient product cooling after baking. The system controls humidity and reduces bacterial presence in circulating air using active UV treatment.
Unlike cooling spirals, product alignment remains unchanged, facilitating subsequent operations such as filling injection in industrial cake processing lines.

Cooling tower

TT Italy’s Cooling Tower carries out the continuous cooling process of cakes in trays. Displacing the trays vertically diminishes the line footprint, especially convenient when dealing with space limitations.

Cooling tunnel

This innovated equipment is intended for cooling your product. TT Italy’s Cooling Tunnel controls the product’s humidity and the presence of bacteria in the circulating air with active UV treatment. Unlike cooling spirals, the product alignment is maintained, facilitating further operations such as filling injection.

TT Italy’s Volumetric Piston Injector accurately injects liquid, viscous or aerated fillings or creams directly into products while they remain in trays.
Our tailor-made solutions support all production capacities and product formats. The machine ensures constant control of filling temperature and volume, even with delicate aerated products. When combined with TT Italy’s Turbo Mixer, it guarantees optimal process stability and product consistency.

Depanning section

TT Italy Depanners are designed to automatically remove cakes from baking trays and place them onto dedicated conveyors while maintaining product alignment. Interchangeable depanning heads are engineered to handle delicate aerated products while preserving their integrity. Robotic Depanner solutions are available for high productivity and specialized industrial applications.

The Sliding Volumetric Piston Injector accurately injects liquid, viscous or aerated fillings into your products while moving on the conveyor belt.
The machine is engineered to meet each client’s requirements for product tracking and dosing control, with vertical and horizontal movement. Constant control of filling temperature and volume guarantees stable performance across the entire industrial bakery process line.

Topping machine

TT Italy’s Topping Machine accurately doses toppings onto your products, while it’s moving on the conveyor belt.
It is designed for precise application of jams, chocolate and other liquid toppings used in cupcakes, muffins and deposited cakes. Aligning and phasing systems ensure perfect topping positioning during the food processing cycle.

Semi-automatic line

This semi-automatic industrial cake line integrates TT Italy’s advanced food machinery technology to provide complete control over the production process.
The Compact Line is ideal for start-ups or pilot production and can easily be expanded into a fully automatic industrial bakery line with higher productivity.

Volumetric piston injector for filled products

This Volumetric Piston Injector is designed to inject liquid, viscous or aerated fillings into filled bakery products such as croissants, éclairs, krapfen and donuts.
