Cheesecake Line

Our turnkey industrial cheesecake line is designed to precisely optimize cheesecake production within food processing environments. The system is engineered according to the client’s productivity targets and product specifications, ensuring a plant for the bakery industry capable of delivering stable and repeatable results.

Turbo mixer section

Batter & Cream preparations

The pre-mixing equipment can be manufactured in different sizes according to the productivity required. We provide two dedicated mixing systems, one for batter and one for cream.
The batter pre-mixer features blades rotating on the vertical axis with a flat bottom, while the cream pre-mixer blades rotate on the horizontal axis with a round bottom. Pre-mixers can be fully double-jacketed to ensure precise temperature control during preparation.

Turbo Mixer

The Turbo Mixer is designed to emulsify and aerate batter and cream using air, allowing the desired specific gravity required in industrial cake production.
It can be used both for cream and liquid mixtures. Emulsification is achieved through the engineering design of rotor and stator, while aeration occurs through air or gas injection directly in the turbo head. The equipment is available in several sizes depending on production capacity and industrial bakery requirements.

Cooling system’s benefits

Inside the Turbo Mixer head, the rotor spins within the stator, emulsifying and aerating the mixture while generating heat through friction. Uncontrolled heat may affect the constancy of aeration and emulsion.
TT Italy addresses this challenge of food processing technology by equipping all Turbo Emulsifiers with a double temperature control system that keeps the temperature stable and ensures homogeneous specific gravity.

The Digital Control System allows full monitoring of production and process control parameters, ensuring a high level of product quality and fast return on investment.

Cheesecake oil sprayer

This equipment doses the correct quantity of greasing agent onto the cake pan, allowing easy extraction of the cheesecake after the baking process and improving efficiency in the industrial bakery production line.

Volumetric crumb deposit

This system deposits a precisely dosed quantity of crumb base into the cake pan, ensuring uniform product structure and consistent cheesecake production quality.

Crumb pressing

The crumb pressing device applies an evenly distributed downward force to level the crumb base inside the cake pan, preparing the product for the next stage of the food processing line.

Volumetric cheesecake depositor

This system deposits a precisely controlled quantity of cheesecake batter into the cake pan. It is equipped with product presence detection to guarantee accurate dosing and reduce waste during industrial cheesecake production.

Volumetric topping deposit

This system deposits a precisely dosed quantity of cream topping on top of the previously deposited cheesecake batter.
It is equipped with product presence reading for accurate operation and reduced waste.

Finger marble mixer

This decorating device creates the classic marble effect in cheesecake products using rotating immersion rods. The system allows manufacturers to obtain distinctive visual patterns while maintaining consistent production results.

Celebration Cake Lines

Our industrial celebration cake line is designed for dressing, forming, coating and decorating round celebration cakes and square celebration cakes. The system is engineered to guarantee high flexibility and to operate step by step through the decoration process.
The line automatically applies decoration to the top and sides of the cake, while operator intervention is limited to placing the cake bases at the beginning of the production process line.

Carton tray dispenser for round and square cake base

This first station automatically feeds the carton base that supports the cake. An operator places the first cake layer onto the carton tray before entering the following steps of the industrial cake processing line.

Syrup dispenser for round and square cake base

The syrup dispenser automatically applies syrup onto the bottom layer of the cake, ensuring uniform moisture.

Cream dispenser for round and square cake base

The cream dispenser automatically distributes cream onto the bottom cake layer, preparing the product for the next step of industrial celebration cake production.

Volumetric peripheral icing dispenser for round and square cake base

This system distributes a precisely dosed quantity of icing cream on the external surface of round or square cakes, coating the side and top simultaneously.
The system includes product presence detection for accurate operation and waste reduction. Dosing precision is achieved through volumetric piston technology with fine adjustments for consistent process stability.

Granular side decoration application

Granular dry ingredients are automatically applied to the sides of base-iced cakes. The system consists of a hopper for product loading, equipped with a motorized system to regulate the product flow according to the customer’s requests and a conveyor to accelerate the granular product towards the cake side. A deflector surface distributes the topping evenly, while a collection tray captures excess material, improving production efficiency and reducing waste.

Peripheral decorator top&base for round and square base

TT Italy’s Decorator deposits cream in an intermittent pattern to create decorative horizontal dollops on the external surface of round and square cakes.
The machine performs two simultaneous deposits: one at the base of the cake and one on the top. Product presence detection ensures accurate dosing and reduced waste, while the double motorized volumetric piston system guarantees precision adjustments and stable industrial bakery production performance.
